Well, its hard to say since I've been watching anime for 15+ yrs. Some of the old stuff is still so great.
Some oldies but goodies:
Akira
Battle Angel Alita
Ninja Scroll
Vampire Hunter D (the art isn't great by today's standards, but this was awesome 15+ yrs ago)
Samurai X/Ruroni Kenshin
Some good newer stuff:
Trinity Blood
Samurai Champloo
Claymore
Ah My Goddess (newer TV series)
Black Lagoon
and of course...Bleach and Naruto
For my fave, it would have to be a tie btw
