Why do we celebrate July 4th? Hear me out...?

Out of 56 delegates only John Hancock had signed the Declaration of Independence as of July 4th, 1776. Moreover, I could declare myself the Pope it really wouldn't mean anything unless I was recognized as such. Why don't we instead celebrate the signing of the Treaty of Paris on September 3, 1783 when the Revolutionary War formally ended in the sense that our chief enemy recognized our sovereignty?
